Smoked Salmon Brunch Wrap 🌯

I call this a wrap, but you might also call it a quesadilla or a folded pizza, either way, it's so easy to make and it tastes delicious. This wrap is not that low in calories but it's also not crazy bad for you, it is definitely worth it though 🤤If you follow my measurements, this brunch wrap comes down to around 526 calories.

Ingredients

  • 1 wholemeal tortilla wrap

  • 30gr smoked salmon

  • 1/2 avocado, smashed and seasoned with black pepper and chilli flakes if desired

  • 15gr shredded mature cheddar

  • 1 egg, beaten

  • 1tsp olive oil

  • 1 handful of spinach, washed


Instructions

  1. In a frying pan, heat 1tsp olive oil and fry your beaten egg on medium heat. When the egg is done, lift it and put the tortilla wrap on the pan so the egg will be on top of the wrap. Right now you should have the wrap directly on the pan, with the fried egg on top of it.

  2. Fold the egg in half, and add the shredded cheddar on the exposed tortilla.

  3. Add the smashed avo, the smoked salmon and the spinach on top of the egg.

  4. After a minute or 2, the cheddar should start to melt. When it does, you can remove from heat and slide this on to a plate to close the wrap.

  5. Cut into 3 triangles and serve with sriracha sauce or your favourite dips!

Hot tip: I reckon blue cheese will be a delicious addition or even ham instead of smoked salmon! I didn't add any salt because obviously the smoked salmon and cheese are already salty enough so please adjust to your own taste.
