Quick and Easy Smoked Mackerel on a bed of Garlic & Lemon Tenderstem Broccoli and Carrots šŸŽ

This recipe actually focuses on the stir fry but we thought we might as well share it as it is a very easy and quick recipe to make for a low-carb/light lunch or dinner. We think it took around 18 minutes in total to prepare so we hope you enjoy it! You can also change the mackerel to other types of fish if you'd like, but make sure it is cooked properly before you lay it on the bed of stir fry 🐟

Ingredients

  • 8 tenderstem broccoli sticks

  • 1 small carrot

  • 1 medium-sized clove of garlic

  • 2 fillets of smoked mackerel (we bought the version with cracked black pepper)

  • 1/2 of a lemon

  • salt and cracked black pepper to taste

  • a dash of garlic granules

  • Olive oil

  • Sesame oil

Instructions

  1. Prepare your veg. Rinse your vegetables and shake them dry (or use a salad spinner)

  2. Cut the tenderstem broccoli in half, slice the carrots in half and thinly slice them

  3. Crush the garlic clove and deseed the lemon, making sure you dispose of the seeds

  4. Heat up your stir fry pan and add a little bit of olive oil

  5. Once the oil is hot, fry your crushed garlic until fragrant

  6. Add your broccoli and a dash of salt & pepper

  7. This might take around 2-3 minutes as tenderstem can be quite crunchy, so if you are like me and prefer the broccoli to be more 'tender', then take your stir fry lid and cover the pan for around 2 minutes

  8. Now add your sliced carrots, fry for around 2 minutes before adding a tiny glug of sesame oil and a dash of garlic granules

  9. Take a knife and push it through your broccoli stem, if it is not soft enough, cover with lid and wait for another minute or so

  10. If it is ready, you can now choose whether you want your fish hot or cold. I personally prefer hot so if you prefer cold you can skip step 11

  11. Add your mackerel fillets to the pan and heat it up on skin side for around 30-40 seconds just to make sure it is warm enough to serve

  12. Serve your vegetables on your plate and lay the fish fillets on top

  13. Take your deseeded 1/2 lemon and squeeze it on top of the dish, add a bit more cracked black pepper if you'd like, and it is now ready to eat
