PK's Roast Potatoes šŸ„”

I've asked PK to contribute some content and so if you love potatoes, especially the ones that are crispy on the outside and soft & fluffy on the inside, then this recipe is for you...


Serves: this depends on how many potatoes you are using, and also how many potato lovers you have on the table

Difficulty: Level 0?? maybe 0.5

Ingredients

5x white potatoes, washed, peeled, halved/quartered (depending on size preference)

3x rosemary sprigs

2tbs olive oil

2tbs goose fat

4 or 5 cloves of garlic, skin on

1/4 cup of cornflour

Salt and pepper to taste


Instructions

  1. Boil the potatoes for 10 minutes until you can easily stick a knife through it

  2. Drain in colander and let it steam dry, ruffle them up so the outer edges of the potato become rough & rugged, set aside

  3. In a high sided roasting tin, add in olive oil, goose fat, the garlic cloves and the rosemary sprigs

  4. Place roasting tin in oven at 200 degrees until the oil heats up, this will roughly take 3 mins

  5. Go back to your potatoes, sprinkle some salt and pepper to taste, dust some corn flour over the potatoes, you don't have to use all of the cornflour either, or if 1/4 of a cup is not enough to cover all the potatoes, you can add more

  6. Carefully take out your hot roasting tin with oven gloves, add the potatoes, and toss to evenly coat the potatoes

  7. Place it back in the oven for 30 - 40 mins or until the colour turns golden brown, make sure to turn the potatoes once or twice throughout the roasting process

  8. Once out of the oven and on a serving plate, chop off some rosemary leaves and sprinkle it all over the potatoes, along with a dash of salt and cracked black pepper

  9. POTATOES ARE READY
