Mediterranean Spiced Lamb with Couscous Salad 🏝

This Sunday we felt like eating lamb so we thought we'd take our tastebuds to the Mediterranean. Lamb is not exactly the healthiest piece of meat out there but it is definitely one of the tastiest. This is also the season for pomegranate so we paired the dish with a couscous salad and a spiced greek yogurt dip. In total, this delicious dish comes down to around ~468 calories so it's a perfect light dinner dish especially in the summertime 🥰

Ingredients

  • 300gr lamb steaks

  • 80gr uncooked couscous

  • 1 handful of mint leaves, roughly chopped

  • 1 handful of fresh parsley, roughly chopped

  • 4tbsp pomegranate seeds

  • half a lemon

For the marinade:

  • 1tbsp olive oil

  • 1tsp sumac

  • Dash of chili flakes

  • Sea salt & black pepper to taste

For the yogurt dip:

  • 30gr low-fat greek yogurt

  • 1 garlic clove, minced finely

  • Juice from 1 lemon wedge

  • Sea salt & black pepper to taste


Instructions

  1. In a mixing bowl, add your lamb steaks and marinade ingredients (olive oil, sumac, chili flakes, sea salt & black pepper). Mix and cover with clingfilm or foil and leave it in the fridge for at least 45 minutes. Do this step in advance and take it out 20-30 minutes before cooking.

  2. In the meantime, we can prepare the couscous salad and yogurt dip. Prepare the couscous according to pack instructions.

  3. Once the couscous is ready, add mint, parsley, pomegranate seeds, juice of a quarter lemon, and season with salt & black pepper. Set aside.

  4. For the yogurt dip, mix all the ingredients together and leave it to chill in the fridge.

  5. Heat your griddle pan until hot then grill your lamb steaks. We grilled the steaks for around 2-3 minutes on each side. Cook it like a steak so just go with whatever level of 'done' you prefer. Once the lamb steaks are done, let it rest for a few minutes while you prep the couscous salad.

  6. Serve the couscous and lay your lamb steaks on top and drizzle the yogurt dip all over if desired. Either way, your easy and tasty lamb dish is ready! Close your eyes and we promise you'll feel like you're in the Med having a great time on holiday 🌞
