Lebanese Spiced Chicken Wraps šŸ“

Aren't you glad we took a break from the mushroom-lovin streak? Today we will be sharing this really tasty mid-week meal recipe which is easy to make and super fast (if you choose not to marinade ofc). We used chicken breast but we feel that it would definitely be way more tasty if it was chicken thighs. Hope you enjoy it!

Ingredients

Part A: To make the marinade or rub (if you have no time to marinade):

  • 1 cup of greek yoghurt

  • 4 minced garlic cloves

  • 1tbsp ground coriander

  • 1tbsp smoked paprika

  • 1tbsp ground cumin

  • 2tsp chilli powder or cayenne pepper

  • 1 lemon, juiced

  • Glug of olive oil

  • Salt & pepper to taste


Part B: Other ingredients you would need:

  • 1kg diced chicken breast or thigh - if using chicken thighs, please make sure to remove the bone and skin

  • Shredded lettuce

  • Tomatoes, sliced

  • 4tbsp corn

  • 1/4 onion, thinly sliced

  • 5 wholewheat pitta bread / wraps / flatbreads

  • Tzatziki

  • Hummus

  • Sriracha

Instructions

  1. In a large bowl, mix all the Part A ingredients thoroughly.

  2. Add the chicken and mix well to ensure all the chicken pieces are full of flavour! You can use your hands too but we used a spoon.

  3. If you have the time, wrap clingfilm or foil to cover the top and pop it in the fridge for a few hours (we'd recommend marinading it for a few hours / overnight to ensure the chicken is moist and fully absorbs all the spices, but we didn't have time last night and popped it straight on the grill in the oven).

  4. If you are not marinading it, then turn on your oven to grill mode (grill + fan icon usually) to 220 degrees celsius.

  5. Use a wire rack and place the chicken on top making sure not to overload the rack.

  6. When the oven is ready, pop the chicken in for 20-25 minutes or until the chicken turns golden brown.

  7. Whilst the chicken is cooking, get your sides ready. Mix the lettuce, tomatoes, corn, onion in a bowl. That's your side salad done.

  8. Pop your pitta bread / wrap / flatbread in the oven for a few minutes.

  9. When everything is ready, serve the wrap however you want it! We used the pitta bread as the base, slathered tzatziki and hummus then added the chicken on top. PK also made another one where he stuffed the chicken and salad bits into one pitta before adding all the sauces. Either way we're sure it'll be delicious!



Make it carb free: use the salad as the base, add chicken, and sauces.
Cheese you say? Feel free to add shredded mature cheddar on top!
