Kale, Beetroot and Feta Salad 🥬

I rarely prefer salads over hot food but this salad definitely hit the spot. It's full of all the hottest health foods you can think of so apologies if this recipe is quite #basic. You'll want to try it though because I typically hate salads, so I've had to ensure that this salad was delicious enough that even a salad hater like me would love it.


One serving comes down to around ~370 calories so don't worry, it might be delicious but it is definitely good for you. Also who knew you had to massage kale before you eat them? I certainly didn't, but it's definitely a game-changer. Hope you get to try a batch of this soon for lunch or alfresco this bank holiday 🥰


Serves: 1 (to make a big batch just quadruple the quantities)

Ingredients

The base:

  • 40gr shredded kale, hard stems removed

  • 1/2tbsp extra virgin olive oil

  • 1 lemon wedge


Toppings:

  • 1/2 avocado, cut into small pieces

  • 27gr crumbled feta

  • 4 whole walnuts

  • 1/2 cooked beetroot, cut into small pieces

  • 5gr dried cranberries

  • 1tbsp balsamic glaze

  • Sea salt & pepper to taste


Instructions

  1. Let's get the base ready. Start by tipping kale and olive oil into a mixing bowl. Squeeze your lemon wedge and using your hands, give your kale a good massage. You need to do this for at least 30 seconds until the colour of the kale turns a vibrant green. This will ensure the kale is softer to eat raw.

  2. Once that's done, toast your walnuts for a few minutes on a pan. This brings out a nice smoky flavour to the nuts. Remove from heat and use your hands to break them up. Add to mixing bowl.

  3. Now scatter the avo, feta, beetroot and cranberries on top of the kale. Add some salt & pepper, then drizzle with balsamic glaze. Give it a good mix and serve immediately 😀
