Spice-up-your-life Cauliflower Fried Rice with Halloumi 🍚🧀

Yesterday I tried to make this recipe from Martina Slajerova's book and it went wrong because:

1. I put too many cauliflower florets in the food processor which led to mistake 2

2. As the florets were struggling to shred, I kept pressing the button and so it made the cauliflower way too fine and I think that released some liquid? not sure

3. I didn't follow the steps or prepare the spices beforehand so it was all a bit of a mess, see a pic of the mess below



...but today I'm back, and I prepared everything properly and I've redeemed myself. So for you low-carb dieters, keto keenos, vegetarian vixens, or even if you're just not really feeling like eating meat and want a light dinner, this is a fast and simple dinner. Forgot to mention that it's healthy. Hope you appreciate this Cauli Fried Rice! 💯

Ingredients

1/2 of a cauliflower head, to make 1 big bowl of cauli rice

1 shallot

2 cloves of garlic, thinly sliced

1 celery stick, chopped, quartered

1/3 of a carrot, chopped, quartered

Bit of coriander stem and leaves, chopped

Bit of red chilli, sliced

1 spring onion, thinly sliced, don't forget to separate the root and the leaves

200gr halloumi, sliced into 1 cm slices

6 small plum tomatoes, quartered

1/3 of a courgette, chopped, quartered

1tbs your choice of oil (if you are keto then simply use coconut oil or ghee), I used sunflower oil


Spice mix

1/2tsp paprika

1/2tsp hot paprika

1/2tsp ground cumin

1/3tsp ground coriander

1/2tsp garlic granules

1/2tsp cracked black pepper

1tsp turmeric powder (for that yellow colour and also because it's health!!)

Spice mix

Instructions:

  1. First, I combined all the spices in one pot to make life easier

  2. In a large wok, heat up the oil, medium-high heat

  3. Once hot, add garlic, shallots, celery, carrots, spring onion stem, chilli, and coriander. Cook until fragrant and the carrots are tender, this took me around 5-6 minutes?

  4. Once that's done, add in the chopped courgette, cauli rice and spice mix. Mix together and make sure that the spice is combining nicely with everything, the 'rice' should start looking yellow

  5. After around 6 minutes of vigorously stirring everything in your wok, the rice should be more tender. Now add in the tomatoes and cook again for another 2 minutes, if you have a lid, put the lid on for 1 minute

  6. Try it and add salt and pepper to taste, set aside

  7. Heat up a small non-stick pan, (you can add oil but I chose not to) now fry your halloumi slices on medium-high heat

  8. Let the halloumi do its thing and make itself crispy and delicious, around 2 or 3 minutes on each side

  9. Plate up your cauli rice and lay out the halloumi slices on top, you can also use the spring onion 'leaves' as garnish, WELL DONE

NEW CAULI, WHO DIS?
Tip: Martina's original recipe didn't use a lot of veg but I added the celery, carrots, courgette, shallot, spring onion, so feel free to change around the veg, there are no rules but stay away from veggies that give out a lot of liquid like mushrooms for example, as it can make your cauli rice a bit damp. Also you can change the halloumi for chicken if you want to make this for a non-veggie :)
