Crunchy Roasted Chickpeas 🌞

If you're bored of crisps or want a healthier snack alternative, you need to try these Crunchy Roasted Chickpeas today! All of this is only 397 calories and they're so filling you only need a little handful at a time. Not to mention they are high in fiber and protein! Delicious on their own or to top on salads, Buddha bowls, or jacket potatoes ✨

Ingredients

  • 1 can of chickpeas, drained (save the water to make aquafaba / vegan meringue)

  • 1tbsp olive oil

Seasoning (below is what I used, but you can honestly add any seasoning you want):

  • 1.5tsp chili powder

  • 1tsp all-purpose seasoning

  • a dash of salt

  • a dash of cumin


Instructions

  1. Preheat your fan oven to 200 degrees celsius.

  2. Line roasting tin with baking paper.

  3. Tip chickpeas to a mixing bowl. Add olive oil and seasoning. Toss to ensure an even spice coating.

  4. Tip to roasting tin and roast for 15-20 minutes. As mentioned on our IG, I roasted them for 15 minutes, took them out to toss them around, then popped them back in for 5 minutes.

  5. Once I was happy with the texture, I took them out and let them cool for around 5-10 minutes before eating!

  6. Feel free to roast them for a total of 25-30 minutes (tossing midway) if you want them to be crunchier but please keep an eye out as you don't want them to burn. Enjoy!

Hot tip: Once roasted and cooled, don't forget to keep them in an air-tight container so they don't go bad. They should stay fresh for 3-5 days if stored properly. Let us know if you try them out 🤗
