Caprese Salad 🍅

I've been wanting to make a caprese salad for some time now but I always get sidetracked and end up making pasta or chicken. Finally had the chance yesterday for lunch so thought I'd share the recipe! This salad is a classic Italian salad you can find in just about any Italian restaurant, usually served as a light side salad. To ensure I stay full for longer, I served it with 2 slices of sourdough bread with some salted butter. It all still came down to ~315 calories though, so still guilt-free. If you skip the bread, the salad should come down to around ~164 calories. Enjoy!

Ingredients

  • 2 salad tomatoes, chopped into slices

  • 1/2 handful of fresh basil leaves, more if desired

  • 40gr light mozzarella ball, chopped thinly

  • 1.5tsp extra virgin olive oil

  • 2tsp balsamic vinegar

  • Italian seasoning

  • balsamic glaze

  • Sea salt & black pepper to taste

  • Optional to serve: 2 pieces of sourdough bread with some butter


Instructions

  1. Toast your bread slices if serving with the caprese salad.

  2. Lay your tomatoes on the plate. Scatter the mozzarella and basil leaves all around the tomato slices.

  3. Drizzle the olive oil and vinegar.

  4. Add a little bit of Italian seasoning and season with salt & pepper to taste. Drizzle some balsamic glaze on top to finish if desired.

  5. Serve immediately with bread on the side.
