Blue Mushroom on a bed of Roasted Courgettes, Crispy Chorizo and Caramelised Onions 🤤

We are sorry (not sorry) for the constant flow of mushroom-ey recipes but we just can't seem to shake it off this season! PK bought a creamy blue cheese dip by Saint Agur when we were making Buffalo Wings the other day, and I didn't think I would like it but it honestly changed my mind about blue cheese. I went from being a hater to a lover, so yesterday after work, I went to shop for groceries and I ended up buying Blue Stilton Cheese from Sainsburys. I also bought those big portobello mushrooms and some courgettes. I didn't know what I wanted to make last night but I just knew I wanted BLUE CHEESE.


After some googling, I decided that onions, chorizo, blue cheese, portobello mushrooms and courgettes would be the components to my delicious dinner last night. It was so delicious, I think it would make the perfect starter / appetiser at any dinner party (as long as your attendees love cheese, blue cheese and mushrooms, but if they don't then why are you even friends?! JK). Hope you enjoy making this one-pan roasted mushroom dish as much as I loved it last night 👀

Ingredients

  • 2 portobello mushrooms

  • 2 red onions, cut into wedges

  • 150gr of spanish chorizo, sliced (1 cm in thickness or into quarters, up to you)

  • 2 courgettes, sliced (1 cm in thickness)

  • 70gr blue stilton, crumbled

  • Drizzle of olive oil

  • 4tbs balsamic vinegar

  • Salt & pepper to taste

  • Pinch of mixed herbs


Instructions

  1. Pre-heat your oven to 200 degrees celsius

  2. In a medium-sized bowl, add your onions and courgettes. Drizzle about 1 tablespoon of olive oil, all the balsamic vinegar, dash of salt & pepper and a pinch of mixed herbs

  3. Toss the courgettes and onion wedges in this mixture well. You can even use your hands if you feel like it!

  4. Take a large roasting pan and tip all the ingredients from the medium-sized bowl into the pan

  5. Using a spatula, make sure that the ingredients are nicely placed and not crowding on top of each other, if they are on top of each other they won't roast nicely, they will just steam and that's no fun

  6. Now place your mushrooms on top, and drizzle a tiny bit of olive oil on them

  7. Whilst waiting for your veg to roast, fry the chorizo over medium-high heat on a pan in some olive oil. Once crispy, remove from heat for assembling later

  8. Once the veg is looking nice and roasted, take out the pan and put the crumbled blue stilton cheese on the crevices (top) of the mushroom. Pop this back into the oven for 5 minutes

  9. When the cheese has melted, assemble on a place. I put the veg at the bottom layer, then fried chorizo, then the mushroom on top

  10. Add a last dash of mixed herbs and you're ready to serve! Enjoy 🤗

Cheese tip: You could probably use other types of cheese that you like, such as cheddar, feta, or goat's cheese. I think the more luscious and heavier the cheese, the better. Not sure if it would work that well with lighter-bodied cheeses like parmesan 🧀
